Celeriac ossobuco with a mushroom and truffle velouté, finished with roasted hazelnut.

King oyster mushroom tournedos with silky Jerusalem artichoke, confit leek and a vegetal jus.

Glazed veal shoulder with roasted carrot cream and shallot tatin.
